We keep our crabs at a specific temperature and humidity level which enables us to keep our crabs alive from 2 to 4 days upon receiving them fresh.
The black coloration comes from the southern crab when it is ready to slough (or become a soft shell). This coloration is a sign of a good, heavy crab.
